New wooden cutting boards usually do well to have a food grade mineral oil rubbed into them and to set in. All you have to do is apply the mineral oil to a soft cloth and rub the oil into the board circularly and generously.
Let it set in for about 5 minutes, when the board’s porous wood will absorb most of the oil. These cutting board designs aren’t flawed because they absorb the moisture. This is perfectly natural, but to fill in the board with the oil prevents water from filling it in, instead, which is a harborer of bacteria. Apply the oil until it doesn’t absorb anymore.
